Potato Pastry

2 sheets flaky pastry
1 big potato cubed
1 big carrot cubed
cheese
onion

Cut up carrot and potato. Dice onion. Microwave this till almost cooked. Let it cool. Lay pastry out with paper sheet underneath . Put cheese in middle, then potato, carrot and onion mixture (must not be still hot) Fold corners in to make triangle. Press together to seal. Get a fork and push into pastry maybe three times along. Bake in oven about 180c 350-400f for 45 min to 1 hour. I like some tomato sauce with this one. Its quite easy. The hard part is folding pastry.
