Very Flaky Pie Crust


3 cup flour
1 1/4 cup shortening (I use lard)
1 tsp. vinegar
5 tablespoon ice water
1 egg
1 tsp. salt

Set oven to 400 degrees. Sprinkle bottom of Pyrex pie plate with dry bread crumbs. Combine water and vinegar. In bowl, sift flour and salt. Cut in half of shortening with pastry blender until mixture is like coarse corn meal. Cut in rest of shortening until particles are the size of peas. Beat egg lightly with fork and add ice water with vinegar. Add to flour, blending until dough can be gathered together. Sometimes 1 or 2 more tablespoons need to be added. Roll out gently on pastry cloth. After putting in your favorite filling, put in 400 degrees oven for about 20 minutes, until pastry is golden and then cut oven back to 350 degrees until pie is finished. If pastry turns dark before pie is finished, fold a strip of foil around it.
