Avocado Pesto


2 large avocados; or 3 small
3 cloves garlic; chopped
3 tablespoons lemon juice
65 g coriander leaves
5 tablespoons Parmesan cheese; grated

Prepare the pesto by combining the avocados, garlic, lemon juice, coriander leaves and Parmesan cheese in a food processor. Process until smooth, about 1 minute.
