Basic Apple Pie
7 md Golden Delicious apples
1/4 cup Sugar
2 tablespoon Flour
1/2 tsp Ground cinnamon
1/4 tsp Ground ginger
1/4 tsp Salt
1/8 tsp Ground mace or cardamom
1 tsp Vanilla
Pastry for two crust 9 inch pie
2 tablespoon Butter
Cream
Golden Delicious apples are apples for all seasons and all reasons. It is the best all purpose apple, ideal for cooking as well as fresh eating. They are golden to light yellow-green in color, sometimes with a pink blush. Goldens are juicy with a rich, mellow, mildly sweet flavor and tender, crunchy texture. They keep their shape when cooked or baked. When cut, Goldens stay white longer than other apples. The tender, thin skin doesn't have to be peeled in recipes.
Pare apple. Core and thinly slice apples to equal 7 cups. Combine dry ingredients. Stir in apples and vanilla; place in pastry-lined 9 inch pie plate. Dot with butter; adjust top crust. Seal and flute edges; cut vents and brush with cream. Bake at 425 degrees F. 50 to 60 minutes or until apples are tender.
