Bob Hope's Lemon Pie
1 cup sugar
2 tablespoon sugar
3 tablespoon cornstarch
1 cup boiling water
2 tablespoon butter
1 pinch salt
4 tablespoon lemon juice
4 egg yolks
1 grated rind of 1 lemon
3 egg whites
1 baked pie shell
2 tablespoon sugar
Combine cornstarch and sugar, add water slowly, stirring constantly, until thick and smooth. Add slightly beaten egg yolks, butter, lemon rind and juice and salt. Cook 2-3 minutes. Pour into baked shell. Cover with meringue made from 3 egg whites, beaten stiff and 2 tablespoon sugar. Bake in slow oven 15 minutes until brown.
