Chocolate Cream Pie


2 squares unsweetened chocolate
2 Tablespoons butter
1/3 cup flour
1 cup sugar
1/4 teaspoon. salt
2-1/2 cups scalded milk
3 eggs, separated
3/4 teaspoon. vanilla
1/2 pint whipping cream
1 Tablespoon confectioners sugar
1 cooked 9" pie shell

Melt chocolate and butter in top of double boiler, mix flour with salt and sugar and stir into chocolate mixture. Mix until well blended and stir in 1 cup milk (I put milk in measuring cup in microwave for about 4 minutes to scald), stir until smooth add remaining milk and cook stirring frequently about 20 minutes until smooth and thickened. Beat egg yolk well, stir in a little of chocolate mixture then pour back into pan and cook 3 minutes stirring constantly, remove from heat and stir in vanilla, pour into cooked pie shell, cool to room temperature then refrigerate until cold, then whip cream adding confectioners sugar at the end spread on pie.
