Plum Pie
4 cups ripe plums, coarsely chopped
1 cup sugar
3 1/2 tablespoons instant tapioca
1/4 teaspoon salt
pinch cinnamon
pastry for 2 crust pie
1 tablespoon firmly packed brown sugar
2 teaspoons margarine
In large mixing bowl, combine plums, sugar, tapioca, salt, and cinnamon; mix well. Pour into unbaked pastry shell, sprinkle with brown sugar and dot with butter. Add top crust, crimp edges and pierce top with a fork. Bake in 400 degree oven 1 hour or until crust is lightly browned.
