Low Fat Veggie Pizza

1 large ready-to-cook pizza crust
3/4 cup pizza sauce
10 ounces (2 1/2 cups) shredded mozzarella-style soy cheese, divided
Olive-oil flavored cooking spray
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 cup zucchini, cut in 1-inch strips
1 cup yellow squash, cut in 1-inch strips
1 large red onion, diced
1/2 cup mushrooms, sliced
1 teaspoon garlic, minced
Natures Season, to taste
1/4 teaspoon Italian seasoning blend
1 teaspoon Parmesan-style soy cheese

Preheat oven to 450 degrees. Place crust on pizza pan and spread sauce on it. Sprinkle 1 1/4 cups mozzarella-style soy cheese over top. Set aside.

Spray large nonstick skillet with cooking spray. Add bell peppers, zucchini, yellow squash, onion, mushrooms and garlic to skillet. Spray lightly with cooking spray and toss to coat. Sprinkle with Natures Season and Italian seasoning. Cook and stir vegetables over medium high heat for about 10 minutes or until tender.

Remove vegetables from heat and spread evenly over pizza. Sprinkle Parmesan-style soy cheese over vegetables, then top with remaining mozzarella-style soy cheese. Just before baking, spray cheese with cooking spray. Bake for 13 to 15 minutes or until cheese melts.

Soy has been shown to help reduce the risk for heart disease and cancer. If you want to include more soy in your diet, this delicious pizza is a great way to start.

Makes 12 servings.
