Hawaiian Pork Chops
2 cups crushed pineapple
4 pork chops
3 medium kumara
4 rashers bacon
2 tablespoon brown sugar
salt and pepper
Place pineapple in a large baking dish. Peel and slice the kumara and place over the pineapple. Sprinkle with brown sugar. Season the pork chops with salt and pepper and place on top of the potatoes. Arrange bacon rasher over the top, cover and bake at 350 F about 1 hour. Remove cover and increase heat to 450 F for 10 minutes to brown the bacon and chops.
