Honey Ginger Pork Roast


5 lbs. Center Boneless Pork Loin
1 tablespoon Freshly Grated Ginger Root
2 tablespoon Extra Virgin Olive Oil
2 tsp Ground Ginger
2 tsp Salt
Spray of Freshly Ground Black Pepper
6 cloves whole place along top
Honey

Run knife between fat and meat to form pockets on top of roast. Using a long bladed knife, insert grated ginger into pockets. In small bowl, mix olive oil, ground ginger and salt. Place pork in roasting pan and brush with oil, ginger and salt mixture sprinkle on black pepper and push in the cloves equally along the top of the pork loin. Bake at 350 degrees allowing 30 minutes per pound. About 15 minutes before roast is done, brush meat completely with honey. Allow roast to stand 15 to 20 minutes before slicing.

I would serve this meal with a couple of Baked sweet potatos and butter, and a side dish of fresh cooked string beans and salt pork or fat back.
