Sweet and Sour Pork with Apples


450 g pork; diced
freshly ground black pepper
2 tablespoons dry sherry
1 egg; beaten
2 tablespoons cornflour
6 tablespoons sunflower oil
350 g Bramley apples; peeled, cored, in chunks
1 400 g jar sweet and sour sauce
1 tablespoon sesame seeds; toasted

Yield: 4 servings

Place the pork in a large dish, season with pepper and pour over the sherry. Allow to marinate for 30 minutes. In a mixing bowl, beat together the egg and cornflour. Add the pork to the mixture and coat well. Heat the oil in a wok or large frying pan and fry the battered pork until cooked and golden (5-6 minutes). Drain well on kitchen paper. Return the pork with the apple chunks to the wok. Pour over the sweet and sour sauce and heat through thoroughly. Sprinkle with sesame seeds and serve with freshly cooked rice.
