Deep Fried Sweet Potatoes
When sweet potatoes are deep fried on the order of Idahoes or Russet potatoes, they do taste a bit sweet

Sweet potatoes
We put about 1 qt of canola oil in our deep fry pan/pot on #7 on our electric range which would translate to medium to medium/high. While that is heating, thinly slice your washed and scraped sweet potatoes. When a drop of water sizzles when put into the oil, the oil is ready. Do no over pack the potato slices in the pot. It takes longer for these to cook than regular potatoes.
