Lemon Potatoes 2
Serving Size : 6
12 sm round potatoes, peeled
rind of 1 lemon, thinly sliced or coarsely grated
2 tsp sugar
1/4 c butter
thyme
Cook potatoes in 1 inch salted water until tender, about 25 min. Drain. Heat a cast iron skillet, sprinkle sugar over surface. When it begins to melt, place potatoes in skillet. Shake vigorously, continuously to glaze potatoes on all sides. Remove from heat. Arrange potatoes in serving bowl. Melt butter in skillet and pour over potatoes. Sprinkle with thyme, if desired. Garnish with lemon curls.
