Low Fat Roasted Red Potatoes


1 lb small red potatoes
1 tablespoon olive or vegetable oil
1/2 tsp salt
1/8 tsp pepper
2 tablespoon grated parmesan cheese

Cut the potatoes into 1/4 inch thick slices; toss with oil. Place in a single layer in a greased 13 x 9 x 2 inch baking pan. Sprinkle with salt, pepper and parmesan cheese. Cover tightly with foil. Bake at 350oF for 40 minutes or until tender.

Makes 4 servings.

PER SERVING: 117 cal, 352 mg sodium, 2 mg chol, 15 gm carb, 4 gm pro, 4 gm fat

DIABETIC EXCHANGES: 1 starch, 1 fat
