Low Fat Scalloped Potatoes Parma


Makes 4 servings

4 each potatoes, peeled and sliced
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/2 teaspoon black pepper
1 cup evaporated skim milk

Spray a large casserole with cooking spray. Arrange a single layer of potatoes in the bottom. Season lightly with parmesan, salt, and pepper. Continue to layer and season potatoes. Pour evaporated milk over all. Bake, covered, at 375 degrees for 30 minutes. Bake, uncovered, at 375 degrees for 20-30 minutes, until tender and golden. Serve hot
