New Brunswick Scalloped Potatoes


potatoes
onions
flour
salt
pepper
butter
milk

Thinly slice some potatoes and onions. Butter a casserole dish. Put a layer of the potatoes in the dish, then a layer of onions (you can vary the amount of onions from none to lots according to your taste). Sprinkle with flour, salt and pepper and dot with butter. Add more potato, onion and seasoning layers until about 1" from the top of the casserole (they may boil over and mess up your oven if the dish is too full). Add milk to cover. Bake at 300 deg. F for about 1 1/2 hours or until potatoes are cooked and a nice crust has formed.
