Roasted Cajun Potatoes - Something Spicy


2 1/2 lb. Yellow potatoes (red or white ok too)
1/4 cup olive oil (vegetable oil)
2 shallots finely chopped
1 clove of garlic (minced)
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. cayenne pepper
1/2 tsp. fresh black pepper
2 tablespoon chopped parsley (opt.)

Preheat oven to 450 degrees. Peel potatoes, rise under cold water. pat dry. Cut each potato in 8 slices length-wise. In roasting pan, stir together oil, shallots, salt, paprika, and peppers. Add potatoes, coat them evenly by shaking the pan or with a large spoon. Roast potatoes, turning every 15 min until golden brown (about 45 min) Garnish with parsley if desired.

To make REALLY spicy, add extra 1/4 tsp. of cayenne pepper and 1/4 tsp. of curry.
