Spicy Fries


1 large potato
About 1 teaspoon of canola oil (or just enough to coat the fries)
About 2 teaspoons, (to taste) of cajun spice blend

Preheat the oven to 450 degrees.
Cut the potatoes into fries or wedges (I make about 1/4 inch fries, make wedges a little thinner so they don't take forever to cook). Combine the cut potatoes, oil and about a teaspoon of the spices to thoroughly coat the potatoes. Add more or less spices depending on your taste.

Spread the fries on the baking sheet.
Bake for about 45 minutes or until cooked through.
Make sure you check on them about every 10 minutes so they don't stick. Move them around a little with a spatula and turn them when they are browned on one side.
