Sweet Potatoes and Peaches
2 cans sweet potatoes (or equivalent amt. of boiled fresh ones)
1 15oz can sliced peaches, drained
1/2 cup brown sugar
3 TBS flour
1/2 tsp nutmeg
2 TBS butter
1 1/2 cups mini-marshmallows
In a casserole dish, arrange the sweet potatoes, then add the sliced peaches. Mix the brown sugar, flour and nutmeg and sprinkle on top. Cut the butter over this.
Bake at 350 for about 35 minutes. Add the marshmallows and put under the broiler just until they brown.
