Sweet Potato Pone 2


1 cube butter
1 cup sugar
3 eggs
1/2 cup milk
Juice of 1 orange
Grated zest of 1 orange
1 teaspoon ginger
1/8 teaspoon cinnamon
1/8 teaspoon all spice
1/4 teaspoon nutmeg
3 cups grated raw sweet potato (peeled)

Melt butter in 1 1/2 quart pan (long and shallow). Toss grated sweet potato in melted butter. Mix remaining ingredients and pour over sweet potatoes. Bake at 350 degrees for 1 hour or until set.

I vary the spices somewhat - usually more nutmeg and cinnamon. I also use a mixture of sweet potatoes and yams - usually 1/2 and 1/2. If I use yams, I usually decrease the amount of sugar somewhat.
