Saskatoon Quail


6 Quail, deboned
4 shallots, minced
butter
2 garlic cloves, minced
1 cup Saskatoon berries (like blackberries)
1 oz brandy
6 oz brown sauce (make from scratch or use Knorr's)
salt and pepper to taste

Sauté shallots and garlic in butter until tender. Add berries and bring to a boil. Heat brandy in a small pot. Pour into sauce in pan and ignite. Cook until flames subside and stir in brown sauce. Season to taste with salt and pepper.

Preheat broiler and broil quail for 4 minutes in total - 3 minutes skin side up, then 1 minute skin side down. Place a pool of sauce on the plate and top with broiled quail.

Serves 2.
