Rich Chocolate Self Saucing Pudding
Serves 6
1 1/2 cups (185g/6oz) self-raising flour
1/4 cup (30g/1oz) cocoa powder
3/4 cup (185g/6oz) caster sugar
90g (3oz) butter, melted
3/4 cup (185ml/6 fl oz) milk
2 eggs, lightly beaten
Sauce
1 1/2 cups (375ml/12 fl oz) milk
1 cup (250ml/8 fl oz) water
185g (6oz) dark chocolate, chopped
Preheat oven to moderate 180 degrees C (350 degrees F/Gas 4). Brush a 9-cup capacity deep oven proof dish with oil or melted butter.
Sift flour and cocoa into a large bowl; add sugar, make a well in the center. Add butter and combine milk and eggs. Using a wooden spoon, stir until just combined and smooth; do not over-beat. Pour into prepared dish.
To make sauce:
Place the milk, water and chocolate in a small pan; stir over low heat until melted and smooth. Pour slowly over the pudding mixture. Bake for 45-50 minutes, until firm to the touch. Serve with cream or ice cream and fresh fruit, if desired.
