Spicy Apple Pudding


4 ozs flour
4 ozs butter
2 tsp baking powder
4 ozs cornflour
1 tsp grated lemon rind
1 large apple (more if desired)
water to cook apples
sugar for apples
4 ozs sugar
lemon juice
2 eggs
1 tsp cinnamon

Peel and slice apple, add sugar to taste, lemon rind and water; cook slowly until soft; stand aside to cool. Cream butter and sugar, add a little lemon juice and eggs and mix well. Fold in dry ingredients. Put half the sponge mixture into a casserole dish, spread apple mixture evenly over the mix. Cover with remaining sponge mixture. Bake in moderate oven 15 - 20 minutes. Serve with cream.
