White Pudding


1/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk, skim
2 1/2 teaspoons vanilla, colorless

Combine sugar, cornstarch, and salt in small saucepan. Gradually add milk. Cook over low heat, stirring constantly until mixture comes to a boil. Boil and stir for one minute. Remove from heat and add vanilla extract. Chill and serve.
