Baja Quiche


6 (6-inch) corn tortillas
2 cups shredded monterey jack cheese
1 (8-oz.) can refried beans
1/2 lb. chorizo or italian sausage, cooked and drained
2 tablespoons canned diced green chilies, drained
2 eggs
1 pint(2 cups) half and half
1/2 teaspoon salt
1 avocado, sliced
1 tomato, sliced
cilantro for garnish

Preheat oven to 325F (165C). Line a 9-inch pie pan with overlapping tortillas, extending about 1/2 inch over edge of pan. Sprinkle half the cheese over tortillas. Top with of beans, chrizo or sausage and green chilies. In a small bowl, beat eggs; stir in half and half and salt. Pour egg mixture over chilies. Sprinkle remaining cheese over egg mixture.

Bake 30-40 min. or until firm. Top with avocado and tomato. Garnish with cilantro. Serve warm.

Makes 4-5 srevings.
