Easy Quiche


1 packaged pie crust
2 tbs. olive oil
1 very large or 2 medium onions, sliced
2 cloves garlic, minced or pressed
a little good vinegar (any kind)
eggbeaters equal to 8 eggs
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup grated Parmesan, Romano, or mixed

Put crust in pie plate. Sauté the onions and garlic in the oil over low heat until the onions are brown. Deglaze the pan with the vinegar and put in the pie shell. Mix the remaining ingredients and pour over the top. Bake at 375 (350 if a glass pan) for 30-35 min. Serve hot, warm, or cold, plain or with tomato sauce on top.
