Fried Rattlesnake with Garlic, Lemon and Parsley


Serving Size: 4

1 pound Snake meat, boneless, skinless and cut into 2 inch pieces
1 cup corn oil for frying
1 cup flour
1 teaspoon salt
1/4 teaspoon ground white pepper
1 cup milk
1 medium size onion peeled

Sauce:
1 tablespoon fresh chopped garlic
1 stick butter
1 tablespoon lemon juice
1 teaspoon sugar
1/4 cup chopped parsley

Mix the flour with salt and pepper. Dip the meat in the flour, then the milk and flour again. Heat a frying pan with the oil until it is hot, 350 degrees F. Place the snake and half onions in the oil and fry a few pieces at a time, just don't put too many in the pan, you want to keep the temperature at 350 all the time. Drain on paper, then put on a plate. Repeat until done and re-use the onions. For the sauce heat the butter in a pan on medium heat until it sizzles and pops, add the garlic and cook one minute, add the lemon juice, salt, pepper and parsley, stir to mix everything together and then pour over the fried rattlesnake and enjoy.
