Ham (or Bacon) and Squirrel in Wine


1/2-lb. ham slice, diced and browned (or 1/4 lb of bacon cooked and cut into pieces)
2 squirrels cut into pieces
flour
salt and pepper to taste
2 tablespoon butter
2 tablespoon oil
1 cup dry white wine
1/2 tsp. marjoram
1/2 tsp. rosemary
2 cloves garlic minced
1 dash Tabasco
1/2 tsp. Worcestershire sauce

Brown the ham pieces until crispy or cook and piece bacon. Shake the squirrel pieces in flour, salt, and pepper and sauté until brown in butter and oil, turning often for about 12 minutes. Add remaining ingredients, cover, and cook over fast simmer for 20 minutes more.

Serves 6
