Indian Onion Relish
Serves 4
1 medium onion, peeled
3/4 tsp. salt
4 tsp. lemon juice
1/4 tsp. paprika (the redder in color, the better)
1/8 tsp. cayenne pepper
Cut onion crosswise into paper-thin rings and put rings into a bowl. Add all other ingredients, toss and mix. Set aside for 30 minutes or more before eating in order to let the flavors blend.
