Subgum Fried Rice


1 egg
2 tsps. dark soy sauce
1/4 tsp. sugar
Dash of pepper
1 tablespoon peanut oil
1/2 tsp. salt
1/4 cup onions, diced
2 tablespoon mushrooms, diced
1/4 cup bean sprouts, diced
2 tablespoon green pepper, diced
2 tablespoon tomato, diced
1/4 cup chicken stock
1/4 cup cooked pork, diced
3 cups. rice, cooked

Beat egg in small bowl. In another bowl combine soy sauce, sugar and pepper. Heat wok over high heat. Add the oil and salt. Add the egg to the wok and scramble it. When the egg has cooked, break it into fine pieces. Add the onions, bean sprouts, mushrooms, green pepper and tomato and stir-fry for about one minute. Add the chicken stock. Add the pork, rice and the soy mixture. Stir-fry to heat. Serve hot.

Makes 4 servings.
