Rich Diner Rolls

(see also Crescents, Cloverleaf Rolls, Bowknots)

1 cup milk
1/4 cup butter
1/4 cup sugar
1 tsp. salt
1/2 cup lukewarm water
2 tsp. granulated sugar
2 pkg. active dry yeast
2 eggs
4-3/4 cups sifted all-purpose flour
Melted Butter

Scald milk. Stir in 1/4 cup butter, 1/4 cup sugar and salt. Cool to lukewarm. Pour lukewarm water into large mixing bowl; stir in 2 teaspoons sugar. Sprinkle yeast on top. Let stand 10 minutes. Stir well. Add lukewarm milk mixture and well beaten eggs. Add 2-1/2 cups flour; beat until smooth. Add remaining flour to make soft dough. Turn out on lightly floured board. Knead until smooth and elastic. Place inlightly greased bowl. Brush top of dough with melted butter. Cover; let rise in warm place free from draft until double in bulk. Punch down dough. Turn out on lightly floured board. Proceed according to directions for any of the following shapes; Crescents, Cloverleaf Rolls, Bowknots.
