Kisir (Bulgur Salad)


2 lb fine bulgur
2 finely chopped onions
5 cup water
1 cup olive oil
1 tablespoon tomato paste
2 tablespoons red pepper paste
2 teaspoons cummin
2 teaspoons crushed red pepper
1 teaspoon cayenne
1/2 teaspoon black pepper
1 teaspoon salt
2 lemons juice
1 lb tomatos
1/2 lb cucumbers
1 bunch fresh (green) onions
1 bunch parsley
1/2 bunch fresh mint.

Place the bulgur in warm water until it soaks it up completely. Knead the chopped onions with salt, pepper, cunimin, tomato paste and pepper paste. Mix the bulgur with this mixture and knead till it softens enough to eat. Then mix with chopped tomatos, cucumbers, fresh onions, parsley and mint and pour lemon juice and olive oil over it. Serve with green leaves.
