Thai Wild Rice Salad with Smoked Turkey

Serves 6
4 oz wild rice
2 oz skinless smoked turkey breast, diced
8 oz white long grain rice
1/4-bunch chopped cilantro
1 teaspoon salt
1/2-cup canola oil
2 oz snow peas
2 tablespoon rice vinegar
3 oz enoki mushroom
1/4-teaspoon salt
2 oz diced yellow bell peppers
1 tablespoon minced, fresh ginger
2 oz diced red bell peppers
2 tablespoon minced lemongrass
green onions to garnish
Cook rice and chill.
String snow peas and blanch in boiling salted water for 15 secs., then put in ice water.
Dressing:
Combine lemongrass, ginger and vinegar, then add oil slowly while whisking. Add cilantro.
Toss rice mixture with peppers. diced turkey and dressing. Line a plate with lettuce leaves and mound mixture on top.
Garnish around base of salad with snow peas and enoki mushrooms. Sprinkle top with green onions.
