Peach Salsa
2 cup peach, ripe; peeled and diced
1/2 cup onion, red; diced
1/2 cup bell pepper, red; diced
1/2 teaspoon jalapeno or serrano; minced
2 teaspoon olive oil
2 tablespoon lime juice
1/4 cup mint, fresh; minced
2 teaspoon ginger, fresh; grated
Combine all ingredients. Let flavors mellow for 30 minutes and serve.
