Barbecued Beef Sandwiches
Serving Size : 4
3/4 pound beef sirloin steak or beef top round steak, cut 1-inch thick
1 medium onion, sliced and separated into rings
1 tablespoon cooking oil
2/3 cup barbecue sauce
1 teaspoon lemon juice or vinegar
4 hoagie buns, split and toasted
4 slices Monterey Jack cheese
Trim any separable fat from beef. Cut into bite-size strips.
In a large skillet, cook onion in hot oil over medium-high heat about 3 minutes, or till tender. Add beef strips. Cook and stir for 2 to 3 minutes or to desired doneness.
Stir in barbecue sauce and lemon juice or vinegar. Cook over medium heat till heated through, stirring occasionally. Spoon beef mixture onto hoagie bun bottoms. Top with cheese slices then bun tops.
