French Sandwiches


2 eggs, beaten
4 slices bread
4 slices cooked ham
4 slices cheese
pinch nutmeg
pinch pepper
pinch salt
vegetable oil, about 3/4 cup

Heat oil in a heavy frying pan until it begins to sizzle. In a medium bowl, whisk together beaten egg and spices. Dip each slice of bread in egg mixture, letting soak about 1/2 minute. Make sandwiches with meat and cheese. Place egg soaked sandwiches in hot oil, turning after side is golden. Cook about two minutes on each side on med. heat or until brown. NOTE: (before placing sandwiches in oil, pinch corners of bread to seal.) Cool sandwiches on paper towels to drain off excess oil. Cut sandwiches into triangles.

Serves two.

NOTE:
Do not stuff sandwiches too full or corners will not seal and cheese will melt all over the pan and make one big mess. Believe me.
