Low Fat Pressure Cooker Seven Minute Tomato Sauce

2 tablespoons olive oil
2 large cloves garlic, minced
1 large onion, coarsely chopped
1 tablespoon tomato paste
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 teaspoons balsamic vinegar
3 pounds plum tomatoes, peeled, seeded and coarsely chopped (enough to equal 2 quarts)
1 cup lightly packed fresh basil
3 tablespoon freshly chopped parsley

Heat oil in bottom of a 5-liter or larger pressure cooker. Add garlic and onion and saute until softened, about 5 minutes. Add tomatoes, tomato paste, pepper, salt, vinegar and basil. Stir until mixture begins to come to a boil. Close lid and bring pressure to 15 pounds. Immediately reduce heat to stabilize pressure at 15 pounds and cook for 7 minutes. Remove from heat and let cool until the pressure comes down naturally. Remove the lid. Sauce may have some excess liquid depending on your tomatoes. Place cooker over high heat, stirring frequently to prevent burning, until the sauce begins to thicken. Add parsley in the last few minutes of cooking.

Makes 4 (1-cup) servings.
