Low Fat Tomato-Basil Sauce with Spaghetti (high fiber)


1 onion, chopped
4 cloves garlic, minced
1 tablespoon olive oil
2 pounds plum tomatoes, coarsely chopped
1/4 cup low-sodium tomato paste
1/4 teaspoon red pepper flakes (optional)
3/4 cup snipped fresh basil
8 ounces spaghetti, cooked
2 tablespoons grated Parmesan cheese

Sauté onions and garlic in hot oil until tender, three to four minutes. Add tomatoes, paste, black pepper and red pepper flakes. Bring to a boil. Reduce heat. Cover and simmer, stirring occasionally, until tomatoes begin to cook down, about 15 minutes. Stir in basil. Spoon over hot spaghetti and top with Parmesan.
