Meat Sauce


1 large white onion, finely chopped
3 tablespoon olive oil
1 lb lean ground beef
4 cloves garlic, finely chopped
6 firm, ripe tomatoes, finely chopped
2 tablespoon tomato paste
1 cup dry red wine
1 cup beef consomme

Sauté onion in olive oil in a skillet for 1 minute until soft and transparent.

Add ground beef and garlic to skillet and sauté for approximately 5 minutes until beef is evenly browned.

Add tomatoes, tomato paste, red wine and beef consomme to skillet and stir until well blended. Simmer, uncovered, for 1 hour, stirring frequently.

Makes 6 cups.
