Sweet Fruit Sauce For Wild Geese Or Ducks


2 Cups pan drippings, as much grease removed as possible
1 8 Oz. apricot preserves
9 Oz. orange marmalade
1/8 teaspoon salt, pinch
1/2 Cup orange juice

Mix all the Ingredients in a sauce pan and cook over medium heat until it is reduced about 25%. Serve warm on the side.

Yield about 4 1/2 cups.

NOTE:
This is good on all types of game. You can add diced green chiles or crushed red pepper if you like it spicier.
