Cheddar Scones with Baked Ham


2 cups Unsifted all-purpose flour
1 tablespoon Baking powder
2 tablespoons Paprika
1/3 cup Butter, cut in pieces
1 cup Cheddar cheese, shredded
2 large Eggs
1/2 cup Plus 2 tablespoon heavy cream
Baked ham, thinly sliced

Preheat oven to 425~F. Lightly grease large baking sheet; set aside. In large bowl of electric mixer, mix flour with baking powder, paprika, 3/4 teaspoon salt and 1/4 tsp. pepper. Add butter; at low speed, beat until mixture resembles coarse crumbs. Stir in 1/2 cup cheese. Beat eggs with 1/2 cup heavy cream until blended. At low speed, beat egg mixture into flour mixture just until blended. Turn out dough onto lightly floured surface; shape into ball. With floured rolling pin, roll to 1/2-inch thickness; cut out scones with 2 1/2 inch cutter. Reroll scraps and cut out. Place scones on prepared baking sheet. Brush tops with remaining heavy cream; sprinkle with remaining cheese. Bake 15 minutes, or until golden. Split scones; fill with ham.
