Chocolate Chip Scones


3 cups bleached all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 tsp salt
5 tablespoon unsalted butter
2 eggs
3/4 cup milk
Egg Wash: 1 egg beaten with pinch of salt

Preheat to 450.
Mix dry ingredients in bowl. Cut butter into dry ingredients and rub in until mix resembles cornmeal. Whisk eggs and milk together and stir into flour mix with a fork. Divide dough into 3 portions - form each portion into 5 inch round - cut each round into quarters. Paint with egg wash, allow to dry several minutes and repaint with egg wash. Bake 10-15 minutes until they are firm but not too dry.

Chocolate Chip:
Add 1/2 tsp baking soda to dry ingredients. Switch brown sugar for white. Switch buttermilk for milk. Add 4 ounces chopped chocolate or 3/4 cup chips to dough after butter is added.
