English Scones


1 3/4 cup flour
1/4 cup cornstarch
3 tablespoon sugar, divided
2 tsp. baking powder
1/4 tsp. salt
1/3 cup margarine
2 eggs
1/3 cup milk
1/4 cup raisins (optional)

In a medium bowl, mix flour, cornstarch, 2 tablespoons sugar, baking powder and salt. Using a pastry blender or two knives, cut in margarine until fine crumbs form. Mix eggs and milk, reserve 2 tablespoons. Add remaining egg mixture to flour mixture, along with optional raisins, mixing with fork until dough forms. Using your hands, carefully pat out to 1/2-inch thickness. Cut into 3-inch circles. Place on greased cookie sheet. Brush with reserved egg mixture and sprinkle with remaining 1 tablespoon sugar. Bake in 450 degrees oven 10 minutes or until lightly browned. Serve hot with jelly.

Makes 8 scones.
