Arctic Char with Cucumber Sauce
2 lb boneless Arctic Char fillets
salt and pepper to taste
2 medium cucumbers, peeled and thin sliced or chopped
1 tablespoon Sp lemon juice
1 tablespoon Sp chives, chopped
2 tablespoon Sp fresh dill, chopped
2 tablespoon Sp parsley, chopped
1/4 cup white wine
1 cup light cream
Wash hands. Place fillets on a microwave safe dish. Tuck the end of each fillet under the other so as to have as near even thickness as possible. Season lightly with salt and pepper. Microwave for 4-5 min on 100% power or until fish is easily flaked with a fork. Prepare sauce in advance by preparing all ingredients. Chill 1/2 an hour Spoon the sauce in the centre of each plate. Add the fillets and serve.
