Dressed Baked Orange Roughy


1 1/2 lb Orange roughy fillets
4 cup Fresh bread crumbs, made from 8 slices bread, Preferably whole wheat
1/2 med Onion, minced
1 tablespoon Lemon juice
1/2 tsp Dried marjoram
1/4 tsp Salt
1/4 tsp Freshly ground black pepper
2 tablespoon Butter or margarine, melted
3 tablespoon fresh grated Parmesan Cheese

Preheat oven to 400 degrees F. Place the fillets in a single layer in a lightly oiled, shallow baking dish. Combine bread crumbs, onion, lemon juice, marjoram, salt, pepper and butter in a bowl and mix well. Top the fish with this mixture and sprinkle Parmesan over all. Bake at 400 degrees F. for about 15 minutes or until the fish is opaque and flakes when tested with a fork.

Makes 4 servings
