Halibut Malaga Style
1 medium onion, chopped
4 cloves garlic, chopped
1 large green pepper, chopped
1 bay leaf
2 cloves
5 peppercorns
2 tomatoes, peeled, seeded and chopped
1 kg (about 2 lb) halibut steak
1 teaspoon salt
50 ml (1/5 cup) oil
100 ml (2/5 cup) white wine
Into a casserole large enough to hold the fish put the chopped onion, garlic, green pepper and tomatoes. Add the bay leaf, cloves and peppercorns. Place the fish on top, sprinkle with salt and add the oil. Place on a medium heat until it bgins to sizzle. Then add the wine and just bring it to a boil. Then cover and simmer (or bake in a medium oven) until fish is done and flakes easily, about 25 minutes. If desired, the fish can be removed to a serving dish and the sauce boiled to reduce and thicken. Serve garnished with parsley.
Serves 6.
