Kalamarkia Me Saltsa

Simmered squid in Feta-wine-herb sauce
2 lbs. squid, cleaned, bodies in rings, tentacles whole or halved
2 cup feta cheese
1-2 cups wine (rose' or white)
2 cups olive oil
1 onion, diced
2 tablespoon garlic paste
3 tablespoon parsley, very finely chopped
2 tsp. black pepper, freshly ground
I tsp. lemon juice
2 tsp fresh oregano (optional)
2 tomatoes, fresh, diced
Fry onions in olive oil until transparent. Fry garlic briefly; add wine, simmer 10 minutes or so (less if you are pressed for time). Add feta cheese, pepper, parsley, oregano. Concentrate sauce down to heavier than heavy cream, stirring constantly. Add tomatoes, lemon juice to balance tartness. Add squid, simmer briefly.
