Scallops a Louie


1 pound scallops
1/2 cup butter
very finely chopped garlic
fresh breadcrumbs

1 pound scallops (If using the large ones, cut them in half). Clean and rinse well and simmer in small amount of water until about half cooked. Drain then place into an oven proof casserole dish. Melt unsalted butter in a med. frying pan-add very finely chopped garlic and sauté until the garlic is soft but do not let the butter or garlic brown. Pour this mixture over the scallops. Top with some fresh breadcrumbs and bake in over 400: for 10 minutes. This is great over pasta.
