Spicy Oven-Fried Catfish
2 lb. catfish fillets
3/4 c. water
juice of 1 lemon
1-3 tablespoon Tabasco sauce, to taste
1 c. cornmeal
1/4 c. flour
1/2 tsp. salt
1/4. tsp. pepper
3 tablespoon vegetable oil
Marinate catfish in mixture of water combined with Tabasco and lemon juice for several hours in the refrigerator (all day is best). Pat fillets dry with paper towels.
Combine cornmeal, flour, salt and pepper in a pie pan and dredge the fish to coat. Shake off excess coating. Let stand on waxed paper to dry.
Heat oil in 13X9 inch baking dish in a 400 degree oven. Add fish fillets and bake about 15-20 minutes, until golden brown and until fish flakes easily with a fork.
Serves 4-6.
