Gramma Fileccia's Shortbread
1 lb. soft butter
1 cup icing sugar
1 cup Durham cornstarch
4 cups flour
Sugar
Preheat oven to 275 deg. F. Cream butter. Add sugar and beat well. Add cornstarch and beat well. Add flour, 1 cup at a time for 3-1/2 cups. Kneed by hand last 1/2 cup or so. Use jelly roll pan and roll into pan with fingers. Bake at 275 deg. F. for one hour. Turn off oven. Poke with fork and cut into slices. Sprinkle with white sugar. Put back into oven and leave door slightly ajar. Let cool over night.
